Bread Pulao Recipe | Bread Rice Veg Pulao – Healthy One Pot Meal Recipe with step-by-step photo and video recipe. Pulao or flavoured rice recipes have always been one of the popular choices for breakfast and lunch meals. There are myriad ways a simple vegetable or meat-based pulav can be prepared which generally differs in the vegetables or herbs used in it. However, the pulao can also be extended by adding or topping it with bread and Bread Rice Veg Pulao is one such popular choice.
Well, to be honest, the bread pulao recipe was my favourite pulao recipe during my college days. I am still wondering why it took me so many years to post this video to my blog. I still remember I used to count the number of bread pieces on my plate. Irrespective of breakfast or lunch, Bread Rice Veg pulao was my first choice from my college canteen menu. Moreover, I used to compare the number of bread pieces with my friends and feel happy if I get more. Moreover, when the watery raita meets these crisp bread slices, it is just magical. However, the same bread pieces can also be prepared with rusk too which would hold its crispiness for a longer time. Do try this pulao once and let me if you really liked it?
Furthermore, some more additional tips, suggestions and variants to the bread pulao recipe. Firstly, the combination of spices and herbs with the set of vegetables used in this makes it an ideal bread-based pulao recipe. However, you can follow the same bread topping for any rice-based pulao and it should taste great. Secondly, the typical rice used for this pulao is either sona masuri or long grain basmati rice. However, you may use any rice for this and has to be separated and not turn mushy and sticky. Lastly, you may add any bread type to this recipe. It has to turn crisp and crunchy when fried and holds its shape.

Ingredients
- 3 slice bread
- 2 tbsp oil
- 1 tsp ghee
- 1 bay leaf
- 1 inch cinnamon
- 3 pod cardamom
- 6 cloves
- 1 tsp cumin
- ½ tsp fennel / saunf
- 1 onion, sliced
- 1 tsp ginger garlic paste
- 1 carrot, chopped
- 1 potato, chopped
- 2 tbsp peas
- ½ tsp turmeric
- 1 tsp chilli powder
- ½ tsp cumin powder
- ¾ tsp coriander powder
- ½ tsp garam masala
- 1 tsp salt
- ½ cup curd
- 3 tbsp mint, chopped
- 1½ cup basmati rice, soaked
- 3 cup hot water
- 2 tbsp coriander, chopped
- 2 tbsp fried cashew
Instructions
firstly, trim off the sides of the bread and cut it into cubes.
deep fry in hot oil, stir occasionally on medium flame.
fry until the bread cubes turn golden brown.
drain off the fried bread and keep it aside.
in a large kadai heat 2 tbsp oil,1 tsp ghee. add1 bay leaf, 1 inch cinnamon, 3 pods cardamom, 6 cloves, 1 tsp cumin, and ½ tsp fennel.
saute on low flame until the spices turn aromatic.
now add1 onion,1 tsp ginger garlic paste, and saute well.
further add1 carrot,1 potato, and 2 tbsp peas.
saute for a minute or until the vegetables turn crunchy.
keeping the flame on low add½ tsp turmeric, 1 tsp chilli powder, ½ tsp cumin powder, ¾ tsp coriander powder, ½ tsp garam masala, and 1 tsp salt.
saute on low flame until the spices turn aromatic.
further add½ cup curd, 3 tbsp mint, and cook until the oil separates.
also, add 1½ cup basmati rice and saute for 1 minute. make sure to soak the rice for at least 20 minutes.
add in3 cup of hot water and mix gently.
once the water comes to a boil, cover and simmer for 10 minutes or until the rice is half cooked.
now add fried bread, 2 tbsp fried cashew, and 2 tbsp coriander.
mix gently, making sure the bread is well combined. this helps the bread to absorb the masala.
cover and continue to simmer for 10 minutes or until the rice is cooked well.
finally, enjoy bread pulao with raita.

- firstly, make sure to fry the bread in fresh oil, else the taste of the bread will not be good.
- also, adding a variety of vegetables makes pulao tasty and nutritious.
- additionally, you can make coriander and mint paste and add it to pulao for variation.
- finally, bread pulao recipe tastes great when served after 1 hour.
