And easy zucchini recipe with phenomenal flavours and crispy texture

Wait until you taste my zucchini fries recipe! OMG! The BEST crunchy crispy oven baked zucchini fries that are vegan- made without egg batter or dairy milk, instead I used a dairy free eggless batter and Italian seasoned Panko bread crumbs.

Now you don’t need to miss out on Red Robin or Denny’s fried zucchini sticks. You can make your vegan version at home without a deep fryer and they taste just as good or better- not kidding!

The crunchy coating is so good you will be amazed! And it’s only 15 minute of prep time and they’re baking in the oven, ready to be devoured!

They honestly taste like they’ve been deep fried but they are so much healthier and no messy oil to deal with! and the breading does not fall off! My kids and grandkids LOVE them!

These are best served with my 5 minute vegan ranch dressing and or warm marina sauce for dipping! Ketchup always goes over well with the kiddos too!😊

So if you have fresh garden zucchini to use up this is a great way to do it! Make zucchini fries! Definitely a crowd favourite and so easy to make!

Notes

  • For gluten free zucchini fries: I have not tried this recipe using gluten free ingredients. My suggestion would be to use a gluten free flour blend or rice flour in place of all purpose flour and gluten free panko instead of regular. As I said I have not tested this though. If you try it let me know how it goes for you😊
  • Can these be frozen? have not tried freezing we usually just eat em up when they're fresh out of the oven!
  • Panko is a Japanese style bread crumb and can be found in most grocery stores along side regular breadcrumbs

Your breading recipe is to die for !! I went with chickpea flour , vegan milk and a tbs of yellow mustard to dip before the coating . I added more chili and 1/2 tsp smoked paprika and reduced the nutritional yeast to 2tbs , it seems I made lots of changes but still your recipe is adaptable and easy to adjust to our own taste . The salt 1/2 tsp was spot on I don’t like salty it was perfect , I have never done zucchini sticks it’s so so so good , I have company coming I will have those on the menu thank you !!

Yes. The spray helps them to brown, but it is just as good without.

This is a truly excellent recipe. My whole family loved it. What a delicious way to eat zucchini! Accidentally left out the mustard in the batter. I'm sure it would be even better with it. I made your 5 minute vegan ranch dressing too. It was absolutely delicious.! I made a slight change and used 1/2 cup mayo and 1/2 cup unsweetened cashew yogurt to reduce the fat. It gave it a really nice silky consistency. Thanks for 2 great recipes!!

Made using gluten free Panko crumbs and king Arthur’s gluten free flour. Also used coconut milk since its what I had, but had to thin out the batter. Still turned out great! Especially liked with the warm marinara as suggested. Thanks for a delightful recipe!

Crispy Baked Vegan Zucchini Fries (Easy Recipe) (2024)

FAQs

Why are my zucchini fries soggy? ›

If zucchini is overcooked, it will have a mushy, soft texture. In certain recipes, the author may recommend that zucchini be patted dry or salted and drained before cooking. Although the author may not explain why these steps are important, they shouldn't be skipped.

How do you keep zucchini from getting soggy when frying? ›

Yes, you should always salt your zucchini before frying — especially if you're aiming to achieve a crispy texture. Salting your zucchini helps remove the excess moisture stuck in the zucchini that would otherwise make frying a challenge.

Are zucchini fries healthier than french fries? ›

These Zucchini Fries are a great way to use up those extra vegetables. Plus, they're delicious, easy to make and a much healthier alternative to those greasy french fries.

How do you keep zucchini crisp when cooking? ›

The secret to zucchini with the best flavor and texture is roasting it in a 450°F oven. Roasting zucchini at a high temperature instead of baking or sautéing helps develop browning and a slight char on the outside, which keeps it from getting soggy.

Why do you soak zucchini in salt water? ›

The salt draws the moisture from the flesh which helps ensure that the vegetable stays firm during roasting. This moisture (and excess salt) is patted off with a paper towel before cooking. Added benefit: the salt works its way into the scores of the flesh and seasons the zucchini all the way to the center.

How do you firm up zucchini? ›

Arrange the zucchini pieces into a single layer on a baking sheet lined with parchment paper. (It will stick to the pan if you don't line it first!) Freeze the zucchini for about 1 hour, until it's firm to the touch, then transfer it to an airtight container to preserve the flavor as you store it.

Can you eat too much zucchini? ›

Raw zucchini can also cause gas and bloating, especially if you overdo it. Zucchini is rich in fiber that your gut doesn't digest. When your body doesn't fully break the fiber down, gas can build up and cause bloating and make you pass wind. Eating raw vegetables can cause gas if you have irritable bowel syndrome.

What is a good substitute for potato wedges? ›

Parsnip and Turnip Fries: These are probably the two most popular potato fry alternatives. Parsnips look like white carrots and are full of fiber with a tinge of sweetness. A turnip is round and has a texture almost identical to a potato. We Prep + Rally these every so often in our menus!

Should you salt zucchini before baking? ›

Season it before and after baking.

Tossing the zucchini with garlic powder, Italian seasoning, salt, and pepper before baking gives it an amazing foundation of flavor. But adding a few extra seasonings after it roasts really takes it over the top.

Does salt draw water out of zucchini? ›

Salt causes zucchini rounds to release excess water. This important extra step helps the zucchini to sauté rather than stew in its own juices. I found quarter-inch slices the perfect thickness. Thinner slices fall apart during cooking; thicker slices require a longer salting time.

How can I enhance the flavor of zucchini? ›

You can season the oil before you add the zucchini with garlic, shallots, spices, or red pepper flakes, it's totally up to you. Once the oil, butter, or combination thereof is heated, add all of the zucchini. If the pan seems crowded at first, don't worry. Season with salt and toss to begin drawing out the moisture.

Why is my zucchini turning to mush? ›

Blossom End Rot

It's occurs due to the plants inability to get calcium. This can be caused by a few things: Watering inconsistency (the most likely cause especially if you've had a lot of rain) Soil PH is either too high or too low (do a PH test to check)

How do you fix soggy fries? ›

Put the leftover fries in the hot oil in a single layer, making sure not to crowd the pan. Work in batches if need be. Cook the fries undisturbed until they're warmed through, then toss in the skillet until they're crisp. At this stage, you can choose to add a few fun extra toppings to your fries.

Why is my zucchini squishy? ›

Mold - Maybe the most obvious sign that fresh produce has gone bad. If you see mold on your zucchini, it's time to toss it out. Soft spots - When inspecting whole zucchini, if you find any soft spots that easily indent or feel squishy, this is a sign that it has begun to rot inside.
