Ingredients

  • 3 pounds chicken thighs (about 6) bone in skin on
  • 3 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 3 teaspoons smoked paprika
  • 1 teaspoon salt
  • 3 tablespoon olive oil
  • 1 tablespoon lemon juice

BBQ Sauce

  • 1/3 cup ketchup
  • 1/3 cup soy sauce low sodium
  • 1/3 cup honey
  • 3 garlic cloves grated or finely minced
  • 3 tablespoons red onion grated or finely diced
  • 1/2 teaspoon ginger
  • 1 teaspoon hot sauce

Instructions

  • Preheat the oven to 350 degrees

  • In a small bowl mix together the, garlic powder, onion powder, paprika, salt, olive oil and lemon juice until combined.

  • Place the chicken thighs in a 9x13 baking dish and rub the seasoning mixture on both sides of each thigh.

  • Bake for 20 minutes

  • In a small bowl mix together the ketchup,soy sauce, honey, garlic, onion, ginger, and hot sauce until combined.

  • Remove the chicken from the oven and spread 1/2 of the sauce on top of each chicken thigh. Place back into the oven and bake another 15 minutes.

  • Spread the remaining sauce on top of each chicken thigh and bake for another 15 minutes or until the internal temperature reaches 165 degrees.

  • Remove from the oven and let rest 10 minutes serves with mashed potatoes or rice!

Notes

  • You can also use chicken legs or quarters. Boneless skinless chicken thigh can be used but you'll have to cut down on the cooking time.
  • I prefer to grate the onion and garlic so there are no chunks but you can finely dice them if you prefer.
