Pizzelle cookies are a traditional Italian cookie that is usually made with wheat flour, sugar, and butter. This recipe uses a similar base but substitutes almond flour and erythritol for the wheat flour and sugar, making it a keto-friendly recipe. These cookies are light, crispy, and have a lovely cinnamon flavor. They are perfect for satisfying your sweet tooth without kicking you out of ketosis or the carb guilt.

Keto Pizzelle Cookie Ingredients:

  • 2 tablespoons butter
  • 1/4 cupalmond flour
  • 1/2 teaspoonbaking powder
  • 1 egg
  • 1/2 teaspoonxanthan gum
  • 1/4 teaspoon cinnamon
  • 1 tablespoon water
  • 1 tablespoon monkfruit confectioners

How to make Keto Pizzelle Cookie Instructions:

  1. Preheat thepizzelle makerfirst by plugging it in.No need to spray it with a non-stick cooking spray if your maker is already non-stick.
  2. In a microwave-safe coffee mug, melt the butter for about 20 seconds or until fully melted.
  3. Combine the remaining keto pizzelle cookies ingredients and mix it until it’s well combined.
  4. Use a cookie scoop to scoop out the dough and place it in the center of each pizzelle design on the pizzelle maker.The cookie scoop measures about 2 tablespoons of batter which is perfect for each keto cookie.
  5. Press the lid down and lock it.Cook it for about 1 1/2 to 2 minutes or until the cookie is slightly golden brown.
  6. Use a knife to lift the hot cookie off of the press and quickly lay it flat so it can hold its shape.It will be soft when you remove it and it will crisp up once it cools off.
  7. Sprinkle it with keto friendly confectioners blend sugar or unsweetened coconut powder as an option.
